(top)The internal temperature of the Thermo-Finisher® varies; however, this is not important in regard to its ability to perform. The cooking and finishing that is done in this oven is done as a result of the infrared energy that is coming from above and below the food product. The infrared energy is absorbed by the food, causing the food to heat up. Unlike a conventional oven, the temperature of the air in the cabinet is not what does the cooking in this type of device.
