Chocolate & Pistachio Crepes

 Chocolate & Pistachio Crepes Preparation

Ingredients
250 g wheat flour
1 tbsp. buckwheat flour
100 to 125 g sugar (according to taste)
10 cl water
2 eggs
1 tsp. coarse salt
25 g vanilla sugar (or other flavor)
25 g melted butter (or 1 tbsp. of oil)
500 g dark chocolate
250 g crushed pistachios
½ liter semi-skimmed milk

 

Preparing the batter:

  • Put the sugar, buckwheat flour, melted butter or oil, water, salt, flavored sugar and eggs into a bowl.
  • Beat the mixture and gradually add the wheat flour and half a glass of milk. You should obtain a smooth batter with no lumps.
  • Add the rest of the milk and combine.
  • Leave to stand for about an hour before cooking.

 

Preparing the filling:

  • Chop the dark chocolate into small pieces. Melt in a bain-marie.
  • Coat your crepes with melted chocolate and then add a few crushed pistachios.
  • Decorate with mint leaves, coconut shavings or glazed fruit.
