Duck Breast Preparation

Ingredients
3 duck breasts
12 slices of chorizo
12 sprigs fresh thyme
Salt & pepper

 

Instructions:

  • Cut your breasts in 2, then each half into 4 equal pieces.
  • Heat the griddle to 536°F (280°C) and put the duck on, skin side.
  • Cook until the fat melts and browns the skin well.
  • Adjust the seasoning with salt and pepper.
  • Remove the duck off the griddle and wrap with the chorizo pricked with the sprigs of fresh thyme.
  • Keep cooking during 1 minute, until the chorizo is cooked properly.
  • Serve immediately and enjoy your meal!

Advice: This dish can be accompanied by polenta with black olives and preserved tomatoes.
