This recipe, featured in Hot Topics Vol. 22, Winter 2005, comes from Plums Café & Catering in Costa Mesa, CA.

Ingredients:

  • 2 tbsp. (30 mL) unsalted butter
  • 2 large eggs
  • ½ cup (118 mL) all-purpose flour
  • ½ cup (118 mL) whole milk
  • ¼ tsp. (5 mL) salt
  • Confectioners’ sugar and lemon wedges, for garnish

Instructions:

Preheat oven to 425°F (218°C). Place butter in 9-inch (229 mm) pie plate and put plate in oven until butter is melted. Remove.

Beat eggs in medium bowl with a whisk until frothy. Add flour, milk, and salt. Pour mixture into the pie plate. Bake until fluffy and golden brown (approx. 20 minutes).

Sift confectioners’ sugar over top and serve immediately with lemon wedges. Optionally, top with assorted fresh fruits.
